Agave-Glazed Baby Ribs
WITH GRILLED PINEAPPLE AND CORIANDER SALSA
Attention class! Today, we’re talking about flavour building. And one of my favourite ways to build flavour in sauces or salsas is grilling or charring fruits and veg. Caramelisation emphasizes natural sweetness, while the gentle kiss of heat brings a new layer of smoky complexity. Often unexpected, yet welcomed. These spicy agave-glazed ribs with grilled pineapple salsa are a prime example. Yes, grilling pineapple might seem redundant, especially when your grill is crowded with juicy plant-meats, but trust me, it’s worth making some space on the rack. Grilling makes the pineapple even sweeter, while adding a new layer of depth that will have all the other wannabes at your BBQ seething with envy. And that tastes even better than this salsa.

Ingredients
Charred Pineapple and Coriander Salsa
- ½ pineapple (peeled, cut into quarters, core removed)
- 1 green chili (deseeded and finely chopped)
- A bunch / 1 cup of coriander (finely chopped, tightly packed)
- 1 tsp fine sea salt
- Zest ½ lime
- Jucie ½ lime
- 1 tbsp olive oil
Agave-Glazed Baby Ribs
- 2 x Baby Ribs
- 2 tbsp tomato paste
- 2 tbsp agave syrup
- 1 tsp sweet smoked paprika
- 1 tsp ground coriander
- 1 tsp fine sea salt
- ⅛ tsp cracked black pepper
- Juice ½ lime
- Zest ½ lime
- 2 tbsp olive oil
SERVES 4 / 40 MINUTES

Charred Pineapple and Coriander Salsa
- Peel, cut into quearters and core ½ of a pineapple.
- Place 2 quarters on a hot grill and cook for 10 minutes, until charred.
- In the meantime, finally chop the chili, onion, and coriander.
- Combine the ingredients in a bowl with salt, lime zest and juice, and olive oil. Mix well.
- Store in the refrigerator until ready to serve.
Agave-Glazed Baby Ribs
- Combine tomato paste, agave syrup, sweet smoked paprika, coriander, salt, pepper, lime juice and zest, and olive oil. Whisk to emulsify.
- Glaze the Baby Ribs with the marinade on both sides.
- Place on a hot grill, and cook for 10-12 minutes, turning midway through.
- Once cooked, remove the racks from the grill and slice them into individual ribs.
- Place the ribs on a plate, and spoon over the pineapple salsa.
