Creamy One-Pot Pasta
WITH SUN-DRIED TOMATOES AND MEATY MEAT
I never understood the ‘one-pot recipe’ obsession that plagued my social media feed a few years back. Is it really so hard to wash another pot? But, then I gave in and tried my first one-pot pasta (for scientific purposes, of course), and lo', I was converted. The starch from the pasta thickens into a glossy, creamy sauce that clings perfectly to the noodles, enabling that "slurp, swish, squish" sound we all love to hear from ourselves—and absolutely no one else. Because it's f**king gross.
GET THE MEATY MEAT PORK-ISH
Ingredients

Meaty Meat Pork-ish Pieces  

  • 1 Meaty Meat Pork-ish
  • 2 tbsp oil from sun-dried tomatoes
  • ½ tsp salt
  • ⅛ tsp cracked black pepper

Creamy Sun-dried Tomato Pasta  

  • 1 medium-sized onion (finely chopped)
  • 2 garlic cloves (minced)
  • 2 tbsp oil from sun-dried tomatoes
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • 4 tbsp tomato paste
  • ¼ cup / 40 grams sun-dried tomatoes (chopped)
  • ¼ cup / 60 ml dry white wine
  • 3 ⅓ cup / 800 ml vegetable stock
  • ½ pound / 250 g spaghetti (or pasta of your choice)
  • 1 tsp salt
  • ⅛ tsp cracked black pepper
  • ½ cup / 120 ml plant-based cooking cream

Meaty Meat Pork-ish Pieces

  1. Chop defrosted Meaty Meat Pork-ish into small pieces, about 0.8 x 0.8 inches / 2 x 2 cm.
  2. Heat a non-stick pan over medium heat and add oil from a jar of sun-dried tomatoes.
  3. Once hot, add Meaty Meat pieces, and season with salt and pepper.
  4. Cook for 8-9 minutes, until nicely browned on all sides. Remove from the pan.

Creamy Sun-Dried Tomato Pasta

  1. To the same pan, add more oil from a jar of sundried tomatoes, and heat over medium heat.
  2. Add finely chopped onion and cook for 2-3 minutes before adding minced garlic.
  3. After frying garlic for 1 minute, add chopped sun-dried tomatoes, thyme, basil, and oregano, and fry for another minute.
  4. Add tomato paste and caramelise for 2-3 minutes, until the colour darkens.
  5. Deglaze the pan with white wine, and add vegetable stock along with spaghetti.
  6. Season with salt and pepper, and cover with a lid.
  7. Cook for 18-20 minutes, until the pasta is cooked. Mix the pasta every couple of minutes to prevent sticking or burning on the bottom.
  8. Once the pasta is cooked, add cooking cream and mix well.
  9. Mix in pan-fried Meaty Meat pieces and finely chopped basil.
