Herby Loin
WITH CHESTNUT GRAVY
I was almost certain my gravy-game peaked in 2025… *harumph* Wrong I was! This silky, liquid gold is my magnum opus. My Godfather Part II. My Bohemian Rhapsody. And the secret? Chestnuts. Those weird, wet, grey ones that come in a vacuum bag. Who’d of thought! I guess you could say this is a delicious reminder that it’s what’s on the inside that counts. (Except in the case of this Loin. It’s the gravy on the outside that truly counts).

preparation
Chestnut Gravy
- Heat olive oil in a medium-sized saucepan over medium heat.
- Add shallots and fry for 2-3 minutes before adding garlic.
- After a minute, add carrot, celery, fresh herbs, and dried mushrooms. Season with salt and pepper. Fry for 3-4 minutes, until the vegetables start to caramelise.
- Add tomato paste and fry for 1-2 minutes, until the colour turns darker.
- Deglaze the pan with vegetable stock, white wine, and soy sauce.
- Bring to a simmer and cook for 20-25 minutes, until slightly reduced.
- Strain the liquid and discard the vegetables.
- Transfer the liquid to a blender and add cooked chestnuts. Blend until completely smooth. Alternatively, you would use a handheld blender.
- Store in an airtight container in the refrigerator and heat up before serving.
Herby Loin
- Preheat the oven to 374°F/190°C.
- Combine finely chopped herbs, olive oil, salt, and pepper, and mix well.
- Remove the Whole-Cut Loin from the packaging, and brush with the herby oil.
- Place in the oven and bake for 30-40 minutes, until nicely browned.
- Remove from the oven, allow to rest for a few minutes, and slice into 0.4-0.8 inches / 1-2 cm thick slices.
- Serve with the chestnut gravy.
