Jammy Roasted Tomatoes with Thymey Filet
ON GARLIC RUBBED SOURDOUGH
To me, the beauty of summer is that all societal norms go out the window. Spritz Bianco becomes a socially acceptable means of hydration, no one bats an eye when you finish your 3rd jar of olives in a week, and ‘things on bread’ counts as a well-rounded meal. Naturally, one of the most sensible and sexy things you can put on bread is thinly sliced Thick-Cut Filet (shocker, I know). For fanciness, we’ll embellish it with a jammy combo of balsamic roasted cherry tomatoes, onions, and garlic (a new staple in my fridge). And to really uplift this open-faced sex symbol of a sandwich, we’ll slather it with something (anything) creamy we have on hand (cashew cream, pesto, vegan cheese), then bedazzle it with a few leaves from the 12th basil plant we’ve killed this summer. Simple. Succulent. Socially acceptable. What more could you want?

Ingredients
Jammy Roasted Tomatoes
- 300 g cherry tomatoes
- 1 red onion (sliced into thin wedges)
- 2 garlic cloves (thinly sliced)
- ½ tsp fine sea salt
- Cracked black pepper
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
Thyme Filet
- 2 x Juicy Marbles Thick-Cut Filet
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 sprigs of thyme
Garlic Rubbed Sourdough
- 2 thick slices of sourdough bread
- 3 tbsp olive oil
- 1 garlic clove
To serve
- Cashew cream, pesto, or your favourite plant-based cheese
- Olive oil (to drizzle)
- Flaky sea salt
- Basil leaves

Jammy Roasted Tomatoes
- Preheat the oven to 210°C / 410°F.
- Combine cherry tomatoes, red onion, garlic, salt, pepper, olive oil, and balsamic vinegar in a baking dish. Toss well to coat.
- Place in the oven and bake for 20-30 minutes, until tomatoes and onions become jammy. Toss midway through to achieve even cooking.
- Once baked, remove from the oven and set aside.
Thyme Filet
- Heat olive oil in a non-stick pan over medium heat.
- Add the filet to the pan along with thyme sprigs, and season with salt and pepper.
- Cook for 8-9 minutes, flipping midway through, until nicely browned on all sides.
- Remove from the pan, thinly slice and keep warm.
Garlic Rubbed Sourdough
- Heat olive oil in a pan over medium heat.
- Add two slices of sourdough, and fry for 2-3 minutes on each side, until nicely browned and crispy.
- Once toasted, remove from the pan and rub with a garlic clove on one side.
Assembly
- Spread cashew cream, pesto or your favourite plant-based cheese alternative on the bread.
- Top with sliced filet, spoon over jammy roasted tomatoes, garlic and onion.
- Drizzle with olive oil, sprinkle with flaky salt and finish with a few fresh basil leaves.
