Quick-Pickled Red Onions
• 1 red onion
• ¼ cup water
• ¾ cup pickling vinegar or alcoholic vinegar
• 1 tsp fine sea salt
• 2 tsp granulated white sugar or maple syrup
Meaty Grilled Cheese Toastie
• 1 Meaty Meat Porkish
• 1 pack of La Vie Smoked plant-based bacon
• 1 tbsp olive oil (for cooking Meaty Meat and vegan bacon)
• 4 pieces of sourdough bread
• Vegan cheese of your choice (8 tbsp homemade cashew cheese, or 8 slices of storebought)
Quick-Pickled Red Onions
1. Thinly slice a red onion with a sharp knife or mandoline, and transfer it to a heatproof container.
2. Combine water, pickling vinegar, salt, and sugar in a saucepan and heat up until it starts to boil.
3. Pour pickling liquid over the sliced onion and let it pickle for at least 20 minutes.
4. Keep in the fridge until ready to use.
Meaty Grilled Cheese Toastie
1. Season Meaty Meat with salt and pepper on both sides.
2. Add olive oil to a pan and heat over medium heat. Cook for 5-6 minutes before adding slices of La Vie Smoked Bacon.
3. Cook for another 3-4 minutes, until Meaty Meat is browned on all sides, and the bacon starts getting crispy at the edges. Remove from the pan.
4. Slice Meaty Meat into slices.
5. Assemble the sandwich by layering vegan cheese, Meaty Meat, bacon, quick-pickled onion, and more cheese. Close the sandwich with another piece of bread.
6. Spread butter on both sides of the sandwich.
7. Heat a non-stick pan over medium heat, add the sandwich, and close it with a lid. Cook for 2-3 minutes, until the button is nicely browned.
8. Remove the lid, flip the sandwich, and cook for another 2-3 minutes until golden brown.
9. Remove from the pan, slice in half, and enjoy.
