Meaty Salad Cups
WITH MEATY MEAT, SUSHI RICE, AND PEANUT DIPPING SAUCE
You might be thinking, "Hang on. Haven't you people already made salad cups?” Correct. Gold star, detective. We shared a version of these about a year ago. But here's the thing. The lettuce leaf does not reserve its fresh, crunchy embrace for just one filling. It has so much more to give. So, this time, we packed them with sushi rice, crunchy cucumber, spring onions, cilantro, and chunks of crispy Meaty Meat. Then we topped the whole affair with a peanut dressing so hopelessly addictive you may wake up in a ditch three days hence, wondering why you’re naked and smell like a can of Planters… Worth it though, probably.

Ingredients
Salad Cups
- 1/2 cup dried sushi rice (cooked according to packaging instructions)
- 1-2 salad hearts or Baby Gem lettuce
- 2-3 baby cucumbers (thinly sliced)
- 1 spring onion (thinly sliced)
- ¼ pineapple (peeled and finely diced)
- A bunch of coriander (destemed)
- Sesame seeds (for sprinkling)
Peanut Dipping Sauce
- ¼ cup smooth peanut butter
- 2 tbsp light soy sauce
- Juice of ½ lime
- 1 tsp sesame oil
- 4-6 tbsp water (depending on how runny you like the dipping sauce)
Meaty Meat
- 1 x Meaty Meat Pork-ish
- 1 tbsp neutral oil

Salad Cups
- Cook sushi rice according to packaging instructions.
- Clean salad leaves, slice cucumbers and spring onion, finely dice pineapple, and destem coriander.
Peanut Sauce
- Combine peanut butter, light soy sauce, lime juice and sesame oil in a bowl.
- Slowly mix in water until you achieve the desired consistency. If you like your dipping sauce runnier, add more water.
Meaty Meat
- Remove defrosted Meaty Meat from the packaging, and slice into 0,5 cm/1.9 inch thick slices.
- Heat neutral oil in a non-stick pan over medium heat. Once hot, add sliced Meaty Meat and cook for 2-3 minutes on each side, until browned and cooked through.
- Remove from the heat and serve immediately.
Assembly
- Build the salad cups by adding a spoonful of rice to salad leaf along with cucumber, spring onion, pineapple, coriander, and sesame seeds.
- Drizzle or dip into the peanut sauce.
