Smoky Beans
• 1 shallot
• 3 garlic cloves
• 1 Meaty Meat Lamb
• 3 tbsp olive oil
• 2 tsp smoked paprika
• 1 tsp thyme
• ½ tsp crushed red pepper flakes
• 1 tsp salt
• ¼ tsp black pepper
• 2 tbsp tomato paste
• 400 ml tomato passata
• 1 tbsp maple syrup or brown sugar
• 1 can butter beans (or any beans)
• 2 pieces sourdough bread
Lemony Gremolata
• A bunch of parsley (around 50g)
• 1 garlic clove
• Zest of 1 lemon
• Juice of half a lemon
• Pinch of salt
Smoky Beans
1. Finely dice the shallot and grate or press the 3 cloves of garlic.
2. Drain and rinse the can of butter beans.
3. Use a fork to pull apart the Meaty Meat.
4. Heat 1 tbsp olive oil in a pan. Add the pulled Meaty Meat, season with a pinch of salt and pepper, and cook until it starts to brown, around 5 minutes. Remove from the pan and set aside.
5. In the same pan, heat another tbsp of olive oil. Add the diced shallot and cook for 2 minutes, then add the garlic and cook for another minute.
6. Add the smoked paprika, thyme, and crushed red pepper flakes. Bloom the spices for 30 seconds to 1 minute, being careful not to burn them.
7. Add the tomato paste and let it caramelize for 1–2 minutes.
8. Add the tomato passata, then season with salt, black pepper, and maple syrup (or brown sugar). Cook for 10–15 minutes to remove any "canned tomato" flavor.
9. Add the drained and rinsed beans, as well as the pulled Meaty Meat. Stir everything together, taste, and adjust the seasoning as needed. Cook for another 2–3 minutes.
Lemony Gremolata
1. Finely chop the parsley. (I like to use a food processor for this.)
2. Peel and grate the garlic clove.
3. Mix the chopped parsley, grated garlic, lemon zest, lemon juice, and a pinch of salt. The lemon juice will mellow out the pungent garlic flavor, making it more pleasant.
4. Spoon the gremolata over the beans, or use it to enhance other dishes. It's great on baked potatoes or mixed into a bowl of brothy beans.
Serving
1. While the beans are cooking, heat 2 tbsp olive oil in a pan and fry the sourdough bread until golden on both sides. Alternatively, you can toast the bread in a toaster.
2. Spoon those velvety beans onto your perfectly toasted bread—watch them lounge like royalty on a golden throne. Hit it with a dazzling shower of gremolata, the edible equivalent of glitter. Feeling extra? Of course, you are. Invite some sassy pickles, mixed greens with an attitude, or a few sultry slices of avocado to the party for a bold slap of healthy fats.
