Mexican Pulled Meat
• 1 onion
• 2 garlic cloves
• 3 tbsp tomato paste
• 1 tsp chili flakes (Chipotle works great)
• 3 tsp smoked paprika
• 2 tsp dried oregano
• 1 tsp ground coriander
• 1 tsp ground cumin
• 2 Meaty Meat Lamb
• 40 g dark chocolate
• 500 ml vegetable stock
• 4 tbsp orange juice
• 2 tbsp lime juice
• 1 tsp salt
Serve with
• Sour cream or yogurt
• Thinly shredded red cabbage with lime juice
• Coriander
• Pickled red onions
• Finely sliced radishes
• Avocado
• Tacos, tortilla chips, burrito or rice
• Hot sauce
1. Finely dice an onion and peel, then press two garlic cloves.
2. In a small bowl, mix the spices: 1 tsp chili flakes, 3 tsp smoked paprika, 2 tsp dried oregano, 1 tsp ground coriander, and 1 tsp ground cumin.
3. Shred 2 Meaty Meat filets using a fork or your hands.
4. Heat 2 tbsp neutral oil in a pan. Add the diced onion and cook for 2–3 minutes.
5. Add the pressed garlic and cook for another minute.
6. Stir in the spice mix and let it bloom for 30 seconds.
7. Add 3 tbsp tomato paste and let it caramelize for 2–3 minutes.
8. Add the shredded Meaty Meat, 40 g chocolate, 500 ml vegetable stock, 2 tbsp lime juice, and 4 tbsp orange juice.
9. Mix well and cook for 20 minutes. While it simmers, prepare your add-ins of choice—cook some rice, whip up a salsa, pan-fry tortillas, or quick-pickle some onions.
10. When your Mexican Pulled Meat is ready, don’t hesitate. Serve it immediately with your favorite carb, sauce, pickles, and crunchy chaos. Eat with your hands. Make a mess.
